Ingredients & material

for 100g servings
Sodium alginate 2cc (=1.3g)
Calcium lactate 2cc (=1.5g)
Paprika dye (as needed)
Water 300cc
Syringe (bore, inner diameter 3mm)
Cut the mouth of the plastic dropper and adjust to 3mm
Adjust to obtain drops of about 5~10 cc.
Container with lid x1
Deep plates x2

Preparation

Sodium alginate solution
Prepare 100 cc of lukewarm water in a container with a lid
Add 1.3 g of Sodium alginate.
Cover and shake for 5 to 10 minutes.
Shake until all powder dissolves and the mixture thickens.
Add Some amount of paprika dye and mix well.
It is okay if the mixture is a little dry.
For a more even coloring , dissolve the dye in water before adding it to the mixture.
The total amount of water for the mixture has to be 100 cc. Subtract the amount of water used in this step..
Pour the mixture into a deep dish and let stand until all bubbles disappear, about 10-15 minutes.
Calcium lactate solution
Put 200 cc of water in a deep dish.
Add 1.5 g of Calcium lactate
Stir until dissolved.

Creation of salmon roe

Take the Sodium alginate solution with a 3mm bore caliber dropper
Drop the Sodium alginate solution into the Calcium lactate solution. This step has to be done in a time span of30 seconds
Wait 60 seconds for the artificial roe to harden
Remove the artificial roe into another container with water
Repeat this process.
Prepare the artificial roe for picking
Drain the artificial salmon roe lightly with a colander.
Drain until small water droplets drip.
Add water at a ratio of 100g salmon roe to 10cc of water
This completes the artificial straw for picking.

Amount needed for experiments

Considering that one serving of salmon roe is 15g, you will need over 300g of roe for 20 servings! Make 400g of artificial roe to be sure.

Put 140 cc of lukewarm water and 1.3 g of sodium alginate into a stirring container with a lid, close the lid, and stir for about 5 minutes.

Preparation between stirring
Put 2g of Calcium lactate and 200 cc of water into the deep dish 1 make sure to mix well.
Put 10 cc of lukewarm water and 1g of paprika powder in a deep dish 2 and stir.
Prepare 300 cc of water for stopping the reaction in deep dish 3.
The deep dish 4 is for holding the finished product after the reaction is stopped.

Check that the sodium alginate solution has been completely disolved and mixed with the paprika powder (dye) solution in deep dish 2.

Using the syringe make droplets with the mixture of the deep dish 2 purring them into the deep dish 1 within 40 seconds. Let it harden for another 40 seconds (1 minute and 20 seconds in total).

Stop the reaction by removing the artificial roe from the deep dish 1 using a net scoop or colander. and put it on deep dish 3 filled with water .

Repeat the drop and collection process as necessary. After the reaction is stopped, drain the roe and place the contents in a deep dish 4.

Drip all the mixture in the deep dish 2, and then drain all of the mixture into the deep dish 4.
Drain water from deep dish 4, measure weight, add 10% of weight water and complete.
